Dinner Spanakopitas & Green Salad

Also known by me as "Dinner Spank-o-potomus"...

At our house we are continuing through the week making vegetarian meals planned for us by my favorite friend Cassie. These are spinach and cheese filled pastries that are a traditional Greek food (thank you Wikipedia - the always factual web encyclopedia).

Dinner Spanikopitas by Ina Garten

Things We Learned:

1. You must defrost phyllo dough prior to using (hence we are having this tonight instead of Sunday night, as originally planned).

2. Phyllo dough is not as scary to cook with as it looks - you should try it!

Night Number Two Dinner Rating: (To clarify the rating system it is a scale of 1 to 10. 1 being you would never eat it again and actually couldn't even take more than one bite; 10 being the best meal you've ever eaten - Highlands, Palace Cafe, etc.)

William (Rating based only on vegetarian meals; adding meat for William would clearly catapult the rating!) - 6.5*

Sarah - 7.0

*Too much nutmeg

  1. Yum! I'm so impressed! What was last night? By the way, Sydney is growing too quickly. Please ask her to slow down until I can see her. She is precious!
